Description

Large, spectacular silvery leaves, up to 2m in height, 'thistle' flower heads are eaten before they open.

Culinary Uses

Eaten raw when very young, otherwise boiled or steamed.

Provenance

Purchased in a superstore in the Northern town of Hesdin in France.

Cultivation

Slug beer traps needed early in season nearby. Growing under cover to encourage heads to form - early days yet.

Watered deeply as growing under cover.
